I couldn’t help myself…last night’s dinner was too good not to share. This sunny and 70 weather here in SC has me craving light and refreshing springtime foods, and let me tell you, this salad was such a hit!
On a bed of mixed greens (spinach, kale,…) I added grilled chicken, blueberries, clementine, a hard-boiled egg, roasted almonds, and part skim mozzarella. Topped with Annie’s Light Raspberry Vinaigrette (YUM) and served with a sweet potato on the side, this meal satisfied every springtime food craving I had.
Seriously, you have to try it!
